Nobu Hospitality has announced plans for Nobu Woolfox, a new hotel, restaurant and collection of branded residences set within 185 acres in Rutland, England – marking the first countryside property in the brand’s global portfolio.
Developed in partnership with luxury lifestyle members club Woolfox, the project is positioned around Rutland’s rolling landscapes near the Georgian town of Stamford.
Plans include lake view rooms and suites, a signature Nobu restaurant and bar, curated food and beverage spaces, a spa, swimming pool and gym, and landscaped grounds designed to make the most of the estate’s setting. Naturally, a members club element will sit at the heart of the concept, with the development positioned as a destination for guests, members and residents alike.
The announcement represents a considered shift for a brand built on the energy of urban hospitality. Founded by chef Nobu Matsuhisa, Nobu Hospitality operates a global portfolio spanning six continents, with its culinary identity – defined by a Japanese-Peruvian sensibility – central to each address. Woolfox will be Nobu’s first countryside hotel – a different proposition from the brand’s urban and island addresses.

The location brings its own credentials. Rutland Water – one of the largest man-made reservoirs in Europe – sits at the doorstep, offering sailing, water sports and fly fishing alongside scenic walking and cycling trails. The historic town of Stamford and nearby Burghley House extend the cultural appeal, while the estate’s position places it within one to two hours of London, Cambridge, Birmingham and Manchester.
“For the first time within our portfolio, we have the opportunity at Nobu Woolfox to create a special countryside retreat experience – one that offers all the hallmarks of Nobu, but in a setting defined by nature, tranquillity, and a sense of escape,” said Trevor Horwell, CEO of Nobu Hospitality.
